Growing up my Dad, who lived on a farm in Illinois up to his teen years, would always tell my sister and I to pay attention to our surroundings as we drove long stretches of back roads… to… wherever we might be going at the time. He loved the rolling hills, rows of corn, cotton, open fields or rows of pines. We never understood it as children or even as teens. We preferred to play or listen to our music. My dad would stop at roadside stands and get fresh boiled peanuts, real Vidalia onions, “Not those fake ones in grocery chains”… Once when we went on vacation and while traveling through Tennessee we stopped because we had to find “REAL” Apple Cider…Now all these years later …I find myself enjoying country back roads and “real “ food! I have found myself longing to learn the Old Arts of creating one’s own “real” food. There is nothing like making from scratch your own butter, cheeses, root beer and on this occasion Apple Cider and Apple Cider Vinegar… On this particular evening in class with Jennifer we began by cutting up ten pounds of different varieties of apples. We pressed apples… Then , pressed some more! Squeezed… And bottled apples galore! We learned a lot about cider and vinegar throughout the process. One of my next classes will be Kombucha class! I have learned you can combine the knowledge from both classes to make an Apple Cider Vinegar with a mother that will have all the wonderful bacteria that our bodies need!
